Corn Free Recipes - Corn Free Bread & Yeast Free Bread

Corn Free Bread - Homemade Tortillas
2 Cups Flour (I use organic flour from Super Target)
1 tsp baking soda
1 tsp cream of tartar
1 tsp sea salt
2 Tb canola or sunflower oil (canola is cheaper)
3/4 cup warm milk (i microwave it for 45 seconds)

Mix all ingredients and knead until blended.  Cover and let rest for 20 minutes.  Knead again a little and divide dough into 8 balls.  Put them in a big plastic bag (ziploc) and wait 10 mintues.  Preheat your cast iron pan (med/med high heat).  Then, spread a little flour on a clean counter or surface and roll out the dough as flat as you can.  Place in pan and turn over when you see bubbles - less than one minute so don't go anywhere.  It takes practice and reminds me of making pancakes.  I often adjust the heat but I get usually roll one while the other is cooking.  When you flip it to cook the other side, it doesn't need much time.  You can use these for tacos, pb&j, lunchmeat sandwiches, and even grill cheese on them.  Super good! 


Irish Soda Bread This bread is like a biscuit and tastes great for breakfast with honey on it, or anything else. I did make it one time with half the butter and it became more like a regular bread. I like it that way too. I also don't put any sugar but you may want to if you decide to add raisins or anything else like that. You can really get creative with this bread and once you knead it well, you just put it on a cookie sheet and you are all set. It's quite easy to make.

4 cups flour (I use organic)
1 1/2 tsp of baking soda
1/2 tsp of cream of tartar
1/2 tsp sea salt
1/2 cup margarine (reduce to 1/4 for less buttery bread)
1 cup buttermilk
1 egg
4 Tbsp sugar (I've never used it but traditionally this bread has sugar. I don't like sweet bread)

To brush over bread before/while baking (mix together and brush on bread)
2 Tbsp melted butter
2 Tbsp buttermilk


Preheat oven to 375
Mix all ingredients very well and knead into a large oval. Cut top with X and brush with butter/buttermilk mixture.
Bake for 45 minutes (or until done)
